So are these zombies the kind that only a head shot will kill, or are they just more radiation-crazed cannibals who can ignore danger and pain far better than the average person?

Neither, they have parasites that make them go crazy and mutate. And that parasite lives in their chest cavity, so a shooting them in there is the fastest way to kill them
